What a delightful way to spend the afternoon learning about local olive oil production whilst tasting the varied flavours and then finsihing off with a delicious array of morsels using olive oil – cauliflower soup with truffle oil, black olive thyme art to name a few – and then we even get to take the recipes home! A most enjoyable Sunday afternoon – thanks Pauline and the Slow Food team.
Thank you for your positive comments, your query about labneh, it is yogurt which has been strained in a cloth, while preserving yogurt’s distinctive sour taste. Place yogurt in muslin, make a sling and suspend over a bowl, after 24 hours the whey has drained, remove, shape into a ball and place in the refrigerator. Can add salt to taste in the beginning. This is a Middle Eastern recipe.
